Apple Streusel Breakfast Cake - Michael Fletcher

2 cups flour
1 tsp baking powder
1 tsp baking soda
½ cup butter, softened
½ cup sugar
3 eggs
½ tsp vanilla
⅓ cup orange juice
1 cup light brown sugar
1 cup chopped apples
1 cup chopped pecans or walnuts
¼ cup flour
1 tsp cinnamon
3 tbsp butter, melted
½ cup powdered sugar
2½ tsp orange juice

Preheat oven to 350º.  Grease a 9 or 10 inch tube pan.  To make streusel, combine brown sugar, apples, nuts, and ¼ cup flour and cinnamon.  Set aside.  In a medium bowl combine 2 cups flour, baking soda, baking powder and mix well.  In a large bowl using an electric mixer, beat butter and sugar until fluffy.  Add eggs one at a time, beat well after each addition.  Add vanilla.  Set mixer to low and alternately beat flour mixture and ⅓ cup orange juice into the egg mixture.  Spoon half of the batter into a tube pan and sprinkle with half of the streusel mixture.  Spoon remaining batter over top spreading to make an even layer.  Swirl batter with knife to create a marbled pattern.  Bake for 15 minutes.  Remove cake and sprinkle with remaining streusel.  Return cake to oven and bake until a toothpick is inserted in center and comes out clean.  Transfer to wire rack and cool completely.  Combine powdered sugar and 2½ tsp orange juice.  Mix well, turn cake out onto a serving plate, invert so streusel is on top.  Drizzle glaze over cake.
