Boneless Skinless Chicken Breast Scampi - Charlene Fletcher

2 tbsp. olive oil                                    
1 lg. onion, sliced
½ lemon, juiced                                  
½ tsp. salt                             
½ tsp. pepper                                       
8oz linguine pasta               
¼ cup grated parmesan cheese        
4 chicken breasts, bite-size     
½ head broccoli, bite-size pieces      
1 green pepper, bite-size pieces

Heat olive oil in large fry pan or wok over medium-high heat. Add chicken and stir-fry about 5 minutes.  Remove and reserve.  Add broccoli and stir-fry for 4 minutes.  Add onion and green pepper and stir-fry additional 5 minutes.  Return chicken to pan and stir-fry 5 minutes more.  Sprinkle with lemon juice, salt and pepper.  Boil linguine in large pot of boiling salted water for 9 minutes or just until no longer hard inside; drain.  Place linguine in a large serving dish, top with chicken-vegetable mixture and sprinkle with Parmesan cheese.  4 servings.
