Buttermilk Pancake Mix - Michael Fletcher


8 cups flour                                          
2 cups buttermilk powder
½ cup sugar                                         
2 tbsp + 2 tsp baking powder
4 tsp baking soda                                               
2 tsp salt

Combine all ingredients. Store in an airtight container or jar for up to 6 weeks or in a freezer container up to 6 months.

 TO MAKE PANCAKES

2 eggs, slightly beaten                        
1⅔ cups water
⅓ cup margarine, melted                  
2½ cups mix

Combine eggs, water and margarine.  Add mix.  Stir just until combined but slightly lumpy.  Pour ¼ cup batter onto a hot, lightly greased skillet.
