½ cup chopped onion
½ cup chopped celery
¼ cup margarine
2 cups sliced mushrooms
¼ cup flour
1 tsp salt
¼ tsp pepper
2 cups milk
1½ cups grated cheddar cheese
1 can cream of potato soup
1-2oz jar diced pimento
Remove
shell particles from oysters and set aside.
Sauté celery and onions in margarine.
Add mushrooms and cook one minute. Stir in flour, salt and pepper. Add milk gradually and stir until thickened. Add cheese, stir until melted. Add oysters, soup, pimento and a dash of Tabasco if desired.
Heat until oysters begin to curl.

good without the oysters!)
