Sesame Snap - Barbara Seng

1 tsp baking soda                                               
1 tsp vanilla
2 tbsp butter                                        
¾ cup sesame seeds
2 cups sugar                                         
½ cup chunky peanut butter

Cover a rimless cookie sheet with foil.  Have another piece of foil and a rolling pin ready for later.  Mix the soda and vanilla together and set aside.  In a large saucepan melt butter, gradually adding the sugar, keep stirring.  Continue cooking over medium heat, stirring constantly to break up lumps as they form.  Cook until sugar melts to the consistency of a thick sauce and is caramel in color.  (about 15 minutes)  Quickly add the sesame seeds and peanut butter.  Then stir in the vanilla/soda mixture and remove from heat.  Pour immediately on foil covered sheet.  Cover candy with other piece of foil and roll with rolling pin to and even layer, about ¼ inch thick.  Let cool overnight.  Peel off the foil and break into small pieces, store in air tight container.
