Applesauce Cake - Ruth Fletcher

(Grandpa often mentioned the ‘care packages’ Grandma would   send him during WWII. This is probably one of the items she sent.  Her original recipe card read “This recipe is very old and is good for sending over seas”)

½ cup shortening                                
1 tsp baking powder
2½ cup flour                                        
1 tsp baking soda
1 cup sugar                                          
¼ tsp nutmeg       
1 cup applesauce                                
1 cup chopped nuts
½ tsp salt                                              
1 tsp cinnamon
                          
First blend shortening and sugar.  Then mix baking soda with applesauce.  It will be a frothy odd color.  Then mix flour, baking powder, salt and cinnamon (sifted well).  Combine dry foods (sifted well) with moist food.  Alternate dry and moist food to the sugar, shortening base.   Lastly add pecans.  Bake in a tube pan at 350º for 45-60 minutes.  No frosting needed.  Cake should be moist and solid.
