Braised Honey Chicken - Mark Seng

1 broiler‑fryer chicken, 2-2½ lbs      
2 tbsp honey
3-4 tbsp salad oil                                
2 tbsp soy sauce
1 green onion, cut into ½ inches      
1 tsp salt
1 tsp ground ginger                             
1 can pineapple chunks, drained
½ cup orange juice                         

Wash chicken and pat dry.  Heat oil in wok or heavy skillet.  Add chicken, onion, and ginger.  Over medium heat, brown slowly for 10 minutes, turning chicken several times.  Drain excess oil.  Mix orange juice, honey, soy sauce and salt.  Pour over chicken in pan,  Cover and simmer for 30 minutes or until chicken is done.  Remove chicken onto warm serving platter.  Boil juices down about 2 minutes to make a thick glaze.  Spoon  over chicken.  Garnish with pineapple chunks.  Serve immediately.
