Calzones - Michael Fletcher

(These are great and the kids love making their individual calzone.  You can put just about anything you’d like on a pizza inside!)

1 loaf frozen bread dough                
½ cup tomato sauce                          
1 tsp basil                                             
1 clove garlic, minced                        
1 cup mozzarella, shredded              
2 eggs                                                    
1 tbsp water
2 plum tomatoes
¼ cup chopped onion
¼ cup chopped green pepper
24 slices pepperoni
½ cup cottage cheese
½ cup sliced fresh mushrooms

Thaw the bread dough and divide into 4 pieces.  Roll out the dough on a floured board into a 7 inch circle.  Mix tomato sauce, basil and garlic.  Spread evenly over each circle to within ½ inch of the edge.  Mix cottage cheese and one egg.  Place a dab or two of the mixture over the sauce.  Place tomatoes, pepperoni, onion, green pepper, mushrooms and mozzarella over half of each of the circles.  Fold the dough in half now covering the toppings.  Pinch the edges to seal the dough.  Place them on a greased cookie sheet.  Mix an egg with water and brush the tops of the calzones.  Bake at 375º for 25 minutes or until golden brown.
