Chicken Casserole - Sandi Fletcher

(Aunt Sandi makes great meals for a house full of hungry boys!  This one has worked for her and I enjoyed it on one of my visits there)

4-6 boneless chicken breasts            
1 onion, sliced
½ cup chopped celery
3-4 sliced carrots
1-26oz can cream of chicken Soup 

In a large casserole dish, place onions, carrots and celery.  Pour the Cream of Chicken soup over the vegetables.  Place the breasts on top.  Cover and bake at 350° for 45 minutes to one hour or until the chicken is done.  Serve over hot rice.
