Lumpia - Amy Seng

(we’ve made these at home with the kids with a Fry-Daddy in the middle of the table.  The kids loved rolling, and eventually frying and eating their own.)

1½ lbs ground beef                             
6 green onion, chopped
½ cup bean sprouts                            
⅓ cup water chestnuts
2 eggs                                                    
1 medium carrot, grated
1 tsp black pepper

Brown and drain ground beef.  Mix vegetables (well chopped), beef, eggs, and pepper.  Wrap in lumpia wrappers (eggroll style).  Fry in oil and shortening combined at 350º until lightly brown; drain.  Serve with Sweet and Sour Sauce (See Sauces, Dressings, & Relishes section for recipe.)
