Rainbow Cake - Michael Fletcher

(This recipe came from a neighbor.  Its great in the summer, and very effective.  The stack of cakes and fruit with ice cream truly looks like a rainbow, only it one you can eat!)

2 angel food cakes                             
1 pkg strawberry Jello
1 pkg lime Jello                                   
1 pkg orange Jello
1 pkg frozen strawberries                  
1 pkg frozen blueberries
1 can mandarin oranges                   
1 gallon vanilla ice cream

Tear angel food cake into bite sized pieces.  Divide pieces evenly into three separate bowls.  Pour the Jello mixes into each bowl with the torn cake pieces, making one bowl of each flavor.  Mix each bowl well to coat the cake pieces well.  Spray the inside of a tube pan with PAM or any other non stick spray.  Pour the contents of the cake pieces with the strawberry Jello mix into the bottom of the pan.  Pour thawed frozen strawberries over the cake and the spread some softened vanilla ice cream over the entire layer to cover.  Next layer with the cake pieces with the lime Jello, pour over with the blueberries and spread more ice cream to cover this layer.  Layer with the cake pieces with orange Jello and spread mandarin oranges over them cake pieces.  Spread vanilla ice cream again finishing this layer.  Place in freeze to allow ice cream to sufficiently solidify again.  Invert tube pan and gently pat out cake onto a platter.  Slice and serve!
