Pumpkin Roll - Amy Seng

3 eggs, beaten well                              
1 cup sugar
cup pumpkin                                  
1 tbsp lemon juice
1 tsp baking powder                           
1 tsp ginger
½ tsp nutmeg                                       
1 tsp cinnamon
½ tsp salt                                              
¾ cup flour
½ cup chopped walnuts                    
1 cube margarine
8oz cream cheese                                
1 cup powdered sugar
1 tsp. vanilla

Mix the eggs, sugar, pumpkin and lemon juice together and then beat in baking powder, ginger, nutmeg, cinnamon, salt and flour.  Pour into 15x10 jelly roll pan (cookie Sheet) that has been greased and floured.  Sprinkle chopped walnuts on top.  Bake at 350º for 15-18 minutes.  Then turn out onto a towel, roll with towel and cool.  Mix margarine, cream cheese, powdered sugar, and vanilla well.  Unroll cake and add filling, roll again
