Apple Bars - Barbara Seng

(This is as good as any fancy apple pastry you’ll ever buy in a bakery!)

2 cups flour                                          
½ cup sugar                                         
½ tsp baking powder                          
½ tsp salt                                              
1 cup margarine                                  
2 egg yolks, beaten
4 cups sliced apples
¾ cup sugar
¼ cup flour
1 tsp cinnamon
1 egg white, beaten

Combine 2 cups flour, ½ cup sugar, baking powder and salt in a bowl.  Cut in the margarine like a pie crust.  Stir in egg yolks.  Pat half of this dough into a large baking sheet or jelly roll pan.  Mix sliced apples, ¾ cup sugar, ¼ cup flour and cinnamon together.  Spread this mixture over the dough in the pan. (If some of the apple slices break, don’t worry!)  Roll remaining dough out between wax paper sheets to cover the pan.  Lay dough over the apple mixture and pat in place.  At this time it may be necessary to do some patching with the dough as it may crumble or break.  Now brush the dough on top with the beaten egg whites.  Bake at 350º for about 35-40 minutes or until golden brown.  A thin powdered sugar icing may be drizzled over the top if desired.
