⅔ cup cold milk
2 cups sugar
dash salt
2 tbsp butter
1 tsp vanilla
Add
chocolate to milk and place over low flame, cooking until
mixture is smooth and blended, stirring constantly. Add sugar and salt. Stir till dissolved and mixture boils. Continue cooking (without stirring) until a
small amount of mixture forms a very soft ball in cold water (232º – about 25
minutes). Then remove from fire and add
butter and vanilla. Cool to lukewarm (110º). Then beat until mixture begins to thicken and
lose its gloss. Pour at once into 8x4
inches greased pan. When cold cut into
squares. Makes 18 large pieces.
