Banana Nut Bread - Amanda Seng

1¾ cups flour                                     
2 tsp baking powder                           
¼ tsp baking soda                              
½ tsp salt                              
½ cup chopped walnuts
cup packed brown sugar
⅓ cup shortening
2 eggs, unbeaten
1 cup mashed bananas (the riper, the better)

Sift together the first four ingredients. Add nuts and set aside. In a mixing bowl thoroughly cream sugar and shortening. Add eggs and beat well.  Stir in mashed bananas, then flour-nut mixture, beating just until smooth.  Pour into greased 9x5x3 loaf pan. Bake at 350º for one hour or until center tests done. Turn out on rack to cool. Refrigerate if desired, serve with butter. Makes one loaf.
