Buttermilk Pancakes - Amy Seng

1 egg                                                      
1 cup all-purpose flour
1 cup buttermilk                                 
1 tbsp sugar
2 tbsp vegetable oil                            
1 tsp baking powder
½ tsp baking soda                              
½ tsp salt

Beat the egg with hand beater until fluffy; beat in remaining ingredients just until smooth.  For thinner pancakes, stir in an additional ¼ cup of 2% milk.
