Butterscotch Brownies - Barbara Seng

¼ cup vegetable oil                            
1 cup brown sugar                              
1 egg                                                      
¾ cup flour                                          
1 tsp baking powder
½ tsp salt
½ tsp vanilla
½ cup chopped nuts

Blend oil and sugar, stir in eggs.  Add dry ingredients. Mix in vanilla and nuts.  Bake at 350º for about 25 minutes.  Be careful not to overbake.  Cut into bars while warm.  Coconut may be used in place of nuts, if desired.
