Coconut Cake - Irene Philgence

(Irene is a lovely old woman from the Island of St. Lucia in the Caribbean, she would make these cakes wrapped in banana leaves and thrown on the coals until cooked)

½ lb sugar                                             
3 eggs
1 cup grated fresh coconut                               
1 lb flour
½ lb butter                                            
1 tsp baking powder

Use fresh coconut, not the stuff from the bag!  Mix all ingredients and put into a well greased loaf pan.  Bake at 350º for 45-55 minutes or until done when toothpick comes clean out of the center.
