Cornmeal Mix - Barbara Seng

4 cups flour                                          
1 tbsp salt
¾ cup sugar                                         
¼ cup baking powder
1 cup shortening                                 
4½ cups cornmeal

Combine flour, salt, sugar and baking powder.  Stir to blend well.  With a pastry blender, cut in shortening until evenly distributed.  Add cornmeal and mix well.  Put into an airtight container or jar.  Store in cool dry area and use within 10-12 weeks.
