Cornmeal Pancakes - Barbara Seng

1¾ cups yellow cornmeal                 
⅓ cup oil
⅓ cup flour                                          
2 eggs
¾ tsp baking soda                              
2¼ cups buttermilk
1 tsp salt

Mix dry ingredients.  Mix wet ingredients.  Combine both mixtures and beat again.  Batter should be the consistency of heavy cream.  Spoon onto hot (375º) griddle and cook until golden brown.
