Doughnuts - Clement Gies

(The oldest of 8 children, Clem was a baker by profession and the only other member of my grandmother’s family that had any chidren)

2 eggs, beaten light                              1 cup of sugar
1 cup sour cream                                 4 cups of flour
1 tsp each of cinnamon and salt      ½ tsp baking soda

Have board well floured.  Take on it one spoon of dough kneading gently till firm enough to roll out and cut. Mix the trimmings with a fresh spoon and cut repeating till all are used.  Cook in hot fat enough to make them raise instantly to the top.  It is more satisfaction to have 2 teaspoons of baking powder sifted with the flour and scant the measure of soda.
