Danish Pancakes / Crepes - Mark Seng

2 beaten eggs                                       
1 cup flour
1 cup milk                                            
2 tbsp sugar
½ tsp salt                                              
1 tsp vanilla

Mix all ingredients until smooth and no bumps remain.  Pour onto a greased skillet and cook at 350º until bubbles form and color is golden brown.  If crepes are desired, pour batter into skillet and swirl mixture in a circular motion to thin out batter.  Top with warm syrup, strawberries, jelly etc.
