Enchiladas - Mark Seng

1 lb hamburger                                    
1 dozen tortillas
1 medium onion diced                       
1 can olives
1 can tomato sauce                         
shredded lettuce
2 small cans enchilada sauce          
sour cream
1‑2 lbs cheddar cheese, shredded    
oil, for frying

Pour oil into frying pan and heat to 350º.  When oil is hot fry tortillas just until they are soft and limp.  Place tortillas on paper towel to allow oil to be absorbed.  In separate pan, fry hamburger and onion together.  Drain oil.  Heat enchilada and tomato sauce together on med. heat. Take tortillas with a prong and dip into sauce pan.  Place tortillas in 9x13 pan.  Spoon hamburger onto tortillas.  Sprinkle with shredded cheese.  Roll tortillas and place length wise in pan.  Repeat process until pan is filled.  Sprinkle with remaining cheese.  Pour remaining sauce over enchiladas.  Bake in 350º oven until cheese is thoroughly melted.
