3 large tomatoes                                  
1 clove garlic, crushed
2 cucumbers                                         
1 tbsp fresh parsley, chopped
⅓ cup olive oil                                      
1 tbsp fresh basil, chopped
¼ cup red wine vinegar                       
½ tsp fresh thyme, chopped
1 tsp salt                                                                
2 tbsp chopped green onion
¼ tsp pepper
Cut
tomatoes and cucumbers into ½ inch thick slices and arrange in a
large shallow dish.  Set aside.  Combine remaining ingredients in a jar.  Cover tightly and shake vigorously.  Pour over tomato and cucumber slices. 
Cover and marinate in fridge for several hours.
