German Pancakes - Evelyn Nuffer

(The first time I had these, in Boise, Idaho, I was surprised to see how high these raised up the sides of the pan.  No sooner did we cut into them and they shrank back down.  But even after shrinking, they are yummy)

1 cup flour                                           
1 cup milk
6 eggs                                                    
6 tbsp butter

Mix all ingredients except butter.  Melt the butter in a 9x13 pan in 425º oven while mixing batter.  Pour the batter over the melted butter into the pan and bake about 20 minutes.  Pancake will rise along the sides and get tall, puffy and golden brown.  Make sure oven rack is at center or lower.  The pancake will deflate when you remove from the oven and cut it, that’s okay!  Serve with whatever toppings excite you – fruit, syrup, butter, lemon juice, powdered sugar.
