Italian Bean with Pasta Soup - Charlene Fletcher

(from a Women’s Conference class on Mix ideas for Christmas gifts)

½ cup small red beans                       
½ cup red kidney beans
½ cup white beans                              
½ cup small pasta

Flavor Packet:

2 tbsp beef broth                                
2 tbsp dried parsley flakes
2 tsp garlic powder                             
2 tsp Italian seasoning

Mix flavor packet and put in small plastic bag.  Place pasta into a separate plastic bag.  Layer beans into a quart jar and place flavor packet and pasta bags on top of beans.

TO MAKE SOUP:

Rinse and pick over beans.  Put in 4-5 quart pan with 4 cups water.  Cover and bring to boil and boil for 2 minutes.  Remove from heat and let soak for 1 hour.  Drain and rinse beans.  Return to the pot and add 8 cups of water, contents of flavor packet, and 1 can of tomato paste (can wait to add tomato paste until after about 2 1/2 hours cooking time if desired).  Bring to a boil, then reduce heat to low.  Cover and simmer 2 ½ hours or until beans are firm and tender.  Uncover, increase heat to medium low and simmer, stirring occasionally for 35 to 40 minutes until soup thickens slightly.   Stir in pasta and increase heat to medium and cook 10 minutes or until pasta is tender.
