Microwave Mexican Chicken - Charlene Fletcher

1½ lbs chicken pieces, skinned        
½ tsp paprika
½ tsp ground red pepper                    
¼ cup salsa
¼ cup catsup                                       
1 tbsp dried minced onion
1 tbsp soy sauce

Rinse chicken; pat dry.  Combine paprika and pepper; rub into chicken.  Arrange chicken pieces in the 1¾-qt. casserole dish with meaty portions toward edge.  Combine remaining ingredients.  Spoon over chicken.  Cover and cook on 100% power (high) for 10-12 minutes or until chicken is tender.  Makes 4 servings.  (We like this served with rice.  It gives the rice a “Mexican” taste when the extra sauce is spooned on it.)
