Pork and Sauerkraut - Barbara Seng

(another Sunday favorite in our home. We like to do this in the crockpot so that the meat is falling apart, it’s so tender.)

pork roast, chops or ribs (amount to suit number of people serving)
1-3 cans Bavarian style sauerkraut

Brown the meat, in oil if needed.  If fat on the meat, put that side down first and allow the fat to render and create its own grease.  Pour in sauerkraut.  Simmer for 30 minutes or more, until meat is tender.  Serve with mashed potatoes and rye bread.
