Mom's Crepes - Amanda Seng

2 cups flour                                          
1 cup sugar
1 cup milk                                            
1 tbsp vanilla
1 pinch salt                                          
2 eggs

Blend all ingredients until smooth.  Pour ¼ cup of batter onto a greased frying pan heated to medium-high. Tilt pan around in a circular motion to coat base of pan with a thin layer of batter.  Carefully flip over when the edges turn golden brown and start to pull away from the pan.  Serve warm with fruit sauce and whipped cream, jam, syrup, powdered sugar, etc.
