Mu Priu Wan - Barbara Seng

1 cucumber, peeled, sliced                
1 medium onion, sliced
2 tomatoes, quartered                       
2 medium green peppers
½ cup vinegar                                      
½ cup sugar
¼ cup soy sauce                                 
2 cloves garlic, crushed
4 tbsp oil                                               
2 lbs pork, cut into thin slices
1 tsp cornstarch                                  
2 tbsp water

Cut up vegetables and set aside.  Combine vinegar, sugar and soy sauce.  Brown garlic in hot oil, add pork and stir fry until well down.  Add vegetables and stir fry for a minute or two longer.  Add soy sauce mixture, cover and cook 2-3 more minutes.  Mix cornstarch and water, stir into fry mixture until thickens slightly.  Do not overcook.  Serve over rice.
