Old Fashioned Chicken Soup - Nora Miller

fresh stewing chicken, cut up           
2 tbsp salt
pepper                                                   
1 small onion, quartered
carrots                                                   
celery
parsley                                                  
Noodles

Cover up chicken with hot water in large pot.  Add salt, pepper and onion.  After water comes to a boil, simmer for at least 2 hours.  Add carrots and celery.  Cook until vegetables are soft.  Serve with smaller pieces of chicken over noodles.  Save larger chicken pieces and two ladles of fat from broth for Lemon Chicken Gravy recipe (See Sauces, Dressings & Relishes).
