cup oil
2 tsp baking powder 2 eggs
2 tsp sugar
2½ cups buttermilk
1 tsp baking soda
1 tsp salt
Mix
dry ingredients in deep bowl. Add wet
ingredients and beat with electric mixer until smooth and well blended. Spoon onto hot (350-375º) griddle sprayed
with PAM. Cook until top is beginning to
look set and dry around the edged, flip over and cook until the bottom is
golden brown. Cut ingredients in half
for smaller amount, this make approx. 22 five inch pancakes.
