Pancakes / Crepes - Nancy Fletcher

(Mike’s family often made variations of these by adding mashed bananas or apples sauce and sliced apples.  They also would wrap strawberries in them and cover with powdered sugar or whipped cream – See also Penny Pancakes)

3 eggs                                                    
1 cup flour
1½ cups milk                                       
dash salt

Mix together with hand mixer (no lumps) and cook on very hot, well greased griddle. (These are a thin pancake sort of like a crepe)
