⅓ cup sugar
1 tbsp baking powder
½ tsp salt
¼ tsp pumpkin pie spice
1 cup colby cheese, grated
2 medium pears, diced
¼ cup butter, melted
In a
large bowl, combine flour, sugar, baking powder, salt and spice. Stir in cheese. In a blender or food processor, process pears, milk, eggs and butter until finely chopped. Pour pear mixture into dry ingredients,
stirring until just moistened. Bake at
425º for 20-25 minutes in paper-lined muffin tins.
