Poppy Seed Dressing - Trudy Neuffer

⅓ cup red wine vinegar                      
½ cup sugar
2 tbsp onion (generous)                     
1 tsp dry mustard
1 tsp salt                                                               
1 cup salad oil
1 tsp poppy seeds

Put all except oil and poppy seeds into a blender.  Blend until onions are no longer visible.  On low speed add oil and blend for 1 minute.  Let rest and make sure it is not going to separate.  If it does, blend again for another minute.  Stir or whisk in poppy seeds.  Chill in fridge and serve over your favorite salad greens.  Tips:  omit dry mustard and replace with Dijon mustard or coarse ground mustard.  1 tsp catsup can also be added for richer color.
