1 large onion, chopped
1 clove garlic, minced
3-14½oz cans beef broth
1-8oz can tomato sauce
2-14½oz cans diced tomatoes
1 cup dry red wine
2 carrots, thinly sliced
1 tbsp sugar
2 tsp Italian seasoning
2 small zucchinis, sliced
1-9oz pkg fresh cheese filled tortellini
½ cup grated parmesan cheese
Discard
sausage casings.
Cook sausage, onion, garlic in a large saucepan over medium high heat,
stirring until sausage crumbles and is no longer pink, drain grease. Return to pan, stir in broth, tomato sauce, diced tomatoes, wine, carrots, sugar and seasoning. Bring to a boil and simmer 30 minutes to
eliminate alcohol from wine. Skim off
any fat. Stir in zucchini and tortellini. Simmer 10 minutes. Sprinkle each bowl with cheese and serve.
