Sesame Cheese Rolls - Ginny Seng

4-4½ cups unbleached flour             
2 tbsp sugar
1½ tsp salt                                            
2 pkgs active dry yeast
½ cup water                                         
¾ cup milk
butter                                                    
1 egg
1 egg yolk                                             
grated parmesan cheese
1 egg white                                           
sesame seeds

In a large bowl, mix 1½ cups flour, sugar, salt and yeast.  Combine water, milk and ½ cup butter in saucepan.  Heat until warm (105-115º).  Combine liquids with dry ingredients.  Beat at medium speed for 2 minutes.  Add egg, egg yolk and ½ cup flour.  Beat at high speed for 2 minutes.  Stir in enough flour to make a soft dough.  Turn out onto a floured board, knead until smooth and elastic.  Put into an oiled bowl, turning to grease top.  Cover with plastic wrap and let rise in warm place for 1 hour or until doubled in size.  Punch down and divide dough in half.  Roll each into 12 inch circle.  Cut into 12 wedges.  Spread each circle with parmesan cheese.  Roll up from wide end, arrange on greased baking sheets with end tip down.  Brush slightly with beaten egg.  Sprinkle with sesame seeds.  Let rise 30 minutes.  Bake at 400º for 12-15 minutes.
