Sopapillas - Barbara Seng

4 cups flour                                          
2 tbsp shortening
1¼ tsp salt                                            
1¼ cup milk
3 tsp baking powder                           
3 tbsp sugar
oil for deep frying

Sift flour, measure and sift again with salt, baking powder and sugar.  Cut in shortening and add milk to make a soft dough just firm enough to roll.  Cover bowl and let dough stand 30-60 minutes.  Roll out to ¼ inch thick on lightly floured board and cut into diamond shapes.  Heat about 1 inch of oil in a frying pan to about 375º.  Add a few pieces at a time , turn at once so they will puff evenly.  Then turn back to brown both sides.  Drain on paper towels.  Serve with butter and honey.
