Sourdough Bread - Jack Fearn

(Jack was a Boy Scout Leader when Mike lived in Michigan, they had starter made ahead of time and made this bread on a campout once.)

4 cups of potato water                      
4 cups flour
½ cup flour                                          
1 tsp baking soda
1 tsp salt                                                               
1 tbsp butter
flour as needed                                   
butter

To make the started, mix 4 cups potato water and 4 cups flour.  Set in a container in a warm, ventilated area to proof for 2 days. (This WILL smell sour!)  To make the bread, use 2 cups of the starter and mix in ½ cup flour, baking soda, salt and 1 tbsp of butter.  Slowly add more flour as needed to create a good dough consistency. (This varies depending on altitude or humidity).  Leave dough to rise for one hour.  Pre heat over to 400º.  Place dough in a lightly greased loaf pan and brush the top with butter.  Bake 2-3 minutes and lower the temperature to 350º.  Bake until golden brown.  (Add 1 cup flour and 1 cup water to starter mix to maintain the starter.)
