10 eggs
½ cup flour
1 tsp baking powder ⅛ tsp salt
4 cups shredded monterey jack
2 cups cottage cheese
½ cup butter, melted
1 pkg pork sausage
2 cans chopped green chilies
In a
large bowl, beat the eggs. Combine flour, baking powder, and salt. Stir into batter, it will be slightly
lumpy. Add cheese, butter, sausage and chilies. Pour into a lightly greased 9x13 pan. Bake uncovered for 50 minutes at 350º or
until a knife inserted near the center comes out clean. Let stand 5 minutes before cutting and
serving. Serve with Salsa and Sour
cream.
