¼ cup brown sugar
½ cup chopped onion
2 tbsp vinegar
2 tbsp butter
1½ tsp salt
1-20oz can pineapple chunks
½ green pepper, sliced
¾ cup uncooked rice
In
skillet sauté ham and onions in butter.
Drain pineapple, reserving juice and adding
water to make 2½ cups of liquid. Add
liquid, rice, pineapple, brown sugar,
vinegar and salt to the ham and stir. Bring to a boil. Reduce the heat, cover and cook over low heat
until liquid is absorbed (about 25
minutes). Add green pepper and cook three more minutes before serving. (I’ve
added a little catsup to the water mixture to give
this some color)
