Swiss Steak - Ruth Fletcher

2 lbs steak 1½ inches thick                               
¾ tsp salt
½ cup flour                                          
3 tbsp shortening
¼ tsp pepper                                        
10oz sliced mushrooms
½ tsp dry mustard                              
½ cup sliced onions
¾ cup sautern wine (can substitute with water)

Mix flour and seasonings and beat into steak with meat mallet.  Brown steak in shortening.  Remove from skillet to baking dish.  Pour wine into skillet and mix well.  In baking dish arrange mushrooms and onions on top of steak.  Cover with liquid from skillet.  Cover and bake at 350º for 2 hours.  (If sirloin is used, baking time will be less).
