Thanksgiving Yam Soufflé - Michael Fletcher

 (We’ve been making this for years…it’s always been a crowd pleaser!)

3 cups sweet potatoes, cooked and mashed                 
½ cup sugar                                         
2 eggs
½ cup butter, melted                          
½ tsp salt
½ cup milk                                           
1½ tsp vanilla                                      
½ cup brown sugar                             
¼ cup flour                                          
½ cup butter, melted                          
1 cup chopped pecans

Mix potatoes, sugar, eggs, salt, milk, ½ cup butter and vanilla.  Blend well until smooth.  Pour into a soufflé dish or deep baking dish.  Mix brown sugar, flour, ½ cup butter and chopped pecans.  Sprinkle over the mixture and bake at 350º for 45 minutes.  Remove from oven and let set for 15 minutes and serve.
