Tuna Casserole - Michael Fletcher

This is fairly simple to make, mostly just preparation.  Our kids now know how to make it, and they love it.  I grew up eating this at home, and have seen many variations of it, but prefer it this way.)

1 pkg elbow macaroni                       
1 large can cream of mushroom soup
1 large onion, chopped                      
1 pkg frozen peas (optional)
salt & pepper to taste                         
12oz cheddar cheese, cubed
2 cans tuna, drained                          
2 tbsp lemon juice
paprika to taste

Prepare macaroni as per package instructions.  Chop onion, drain tuna, and cube the cheese.  Mix soup, tuna, cheese, onion, peas (if desired), into drained macaroni.  Season to taste with salt and pepper.  Add 2 tbsp lemon juice and a few shakes of paprika.  Stir well, and heat until cheese starts to melt.  Sprinkle with paprika and serve.
