Vegetable Soup - Nora Miller

2 beef shanks in bone                        
2 tbsp salt
1 small onion                                       
2 springs of parsley
carrots                                                   
celery
potatoes                                                               
turnips
1 can tomatoes                                   
rice or noodles, cooked

Cover beef shanks with cold water in large pot.  Add salt, onion and parsley. After it comes to a boil cook very low for 2 hours.  Then add carrots, celery, potatoes, turnips.  Continue to cook always low hat and covered.  Before serving add finely cut parsley and cooked rice or noodles.
