3 tbsp butter
¼ tsp pepper
1 tbsp flour
4 cups beef broth
1½ cups water
1 bay leaf
pepper
6-8 slices toasted French bread
½ cup grated Swiss cheese
Chop
and sauté onions in butter.
Add pepper and cook until onions are lightly browned. Sprinkle with flour and cook another minute
while stirring. Add beef broth, water and bay leaf. Simmer 30-40 minutes. Discard bay leaf. Add seasoning if necessary. Pour soup into ovenproof tureen. Top with toasted French bread and Swiss
cheese. Place under broiler or in 400º
oven until cheese turns golden.
