Zucchini Casserole - Ginny Seng
1 lb zucchini, grated with peel
2 eggs
½ cup melted butter
salt and pepper
¾ cup grated cheddar cheese
1 pkg soda crackers, crushed
onion to taste
Combine all ingredients. Pour into greased casserole and Bake 30 to 35 minutes at 350°.
