1 cup chopped tomato
½ cup chopped onion
⅓ cup grated parmesan cheese*
1 cup milk
2 eggs
½ cup Bisquick Mix
½ teaspoon salt
¼ teaspoon pepper
Preheat
oven to 400º. Grease a pie plate. Sprinkle zucchini, tomato, onion, and cheese into pie plate.
Place remaining ingredients into a blender and blend for 30 seconds until
smooth. Pour into pie plate. Bake until knife inserted into center comes out
clean. Approximately 35 minutes. Cool 5 minutes. Garnish with sliced tomato and
zucchini. Serves about 5 people. *You
may also add grated sharp cheddar cheese.
