½ tsp baking powder
¼ cup butter
½ cup sugar
2 egg yolks
1 tsp lemon rind, grated
1 tsp orange rind, grated
⅛ tsp salt
⅜ cup sugar
1 egg white, diluted with ½ tbsp water
1 tbsp cinnamon
¼ cup walnuts, chopped
Sift
flour and baking powder. Cream
butter. Gradually add sugar and continue
creaming until fluffy. Beat egg yolks well.
Add to first mixture with fruit rinds.
Add flour mixture gradually, then beat again. Beat egg whites and salt until stiff, but not
dry. Fold into batter carefully. Pour in greased 8" square or 9"
round pan. Brush with diluted egg
white. Mix sugar, cinnamon and nuts. Sprinkle over top. Bake at 375º for 30 minutes.
