2 cups flour
⅓
cup sugar
½ tsp baking soda 2 tsp baking powder
2 eggs
¾ cup buttermilk
¼ cup oil
1 cup fresh blueberries
1 tbsp flour
1 tsp grated lemon or orange rind
Mix
flour, sugar, salt, soda and powder.
Beat eggs with milk and oil.
Add to dry mixture stirring until only slightly lumpy. Mix blueberries with flour and rind. Add to mixture. Bake in well greased muffin tins at 425º
for 15-20 minutes.
